Bunches O' Stuff

My Running Buddy posted this on twitter this morning:

Omg, that is one of the most hilarious things I've ever seen. Way to kick it up a notch at a boring wedding. I'm impressed that the church didn't mind a bunch of 30-somethings dancing around their church to a song sung by a girlfriend beater. I don't know that any of my friends love me enough to act the fool dancing around my wedding like that. M-dog? Aaron? Any takers? Don't worry guys. I really want my Dad to walk me down the isle and somehow I don't see the Colonel dancing to Chris Brown or any other singer for that matter, lol.

Next on the random list of shit to post today: Jalapeno Lemonade. No, I'm not crazy but I was in pain after a sip due to my stomach restrictions. The Boyfriend found this recipe on Serious Eats and although it caused me some issues, I have to admit it tasted pretty damned good. The heat really isn't that intense and it compliments the sweet lemon oh so nicely. After tasting the end product you might want to water it down a bit- it just depends on how sweet and kickin' you like your lemonade.

Lucy's Jalapeño Lemonade
Ingredients

1 large jalapeño pepper, stem and seeds removed, and cut into thin strips
1 cup sugar
1 cup freshly squeezed lemon juice (about 6 lemons)
Procedure

1. In a medium saucepan, combine the jalapeño strips, sugar, and 2 cups of water. Bring to a simmer over low heat and simmer until the sugar dissolves. Remove the pan from the heat and allow the syrup to cool for 20 minutes.

2. Strain the syrup into a pitcher and discard the jalapeños. Stir in the lemon juice and 2 more cups of cold water. Refrigerate the lemonade until thoroughly chilled. Serve over ice.


And in honor of the passing of the Taco Bell dog, The Boyfriend and I will be attempting a homemade recipe for Baja sauce this evening to accompany our fish tacos. If it works I'll blog the recipe and some pics.
